There's More to Thanksgiving than the Turkey!
The holidays are upon us and I get asked often this time of year for my Sausage, Barley, and Gumbo Soup. It goes great with any holiday meal. . . . . . . .

Sausage & Barley Gumbo Soup

1 can Diced tomatoes
1 can Cream of chicken soup
4 cups Chicken Stock (3 cups for thicker soup)
½ cup uncooked barley
2 cups diced kielbasa or turkey sausage
2 cups diced Andouille sausages
½ cup pepperoni cut in thin strips
8-10 baby carrots sliced
1 cup celery, diced
½ cup diced red pepper
½ cup diced green pepper
¼ - ½ cup jalapeño peppers
1 small yellow onion, diced
3 – 4 cloves garlic
½ tsp. Paprika
1 tsp. Ground Ginger
2 Bay Leaves (during cooking)

Cook sausages until slightly brown. Combine all ingredients including sausages in a slow cooker for 3 – 4 hours. Stir occasionally adding spices to taste.
(If done in a kettle on the stove, bring all ingredients to a boil & simmer for 2 hours.)

A lady was picking through the frozen turkeys at the grocery store, but couldn't find one big enough for her family. She asked a stock boy, "Do these turkeys get any bigger?"
